By Nadina Taylor July 30, 2023

Here's a great way to cool off during these hot summer days. It's an easy, fun, recipe for kids to jump in the kitchen to help make with your parents. Have fun together. Let us know how it turns out!

Ingredients:

1-pound white fish fillets (such as cod or tilapia)

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil, for frying

8 small flour tortillas

1 cup shredded cabbage

1/2 cup mayonnaise

1 tablespoon lime juice

1 tablespoon hot sauce (adjust according to your preference)

1 tablespoon chopped fresh cilantro.

Salt and pepper, to taste

Optional toppings: sliced avocado, chopped tomatoes, sliced jalapenos.

Instructions

1. In a shallow dish, mix together the flour, garlic powder, paprika, salt, and black pepper.

2. Cut the fish fillets into small strips or bite-sized pieces.

3. Heat vegetable oil in a large skillet over medium-high heat.

4. Dip each piece of fish into the flour mixture, coating it evenly.

5. Place the coated fish into the hot oil and cook for about 2-3 minutes per side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.

6. In a medium bowl, combine the shredded cabbage, mayonnaise, lime juice, hot sauce, cilantro, salt, and pepper. Mix well to combine.

7. Warm the flour tortillas in a dry skillet or microwave them for a few seconds.

8. To assemble the tacos, spread a spoonful of the spicy slaw onto each tortilla. Top with a few pieces of crispy fish and any desired toppings. 9. Serve immediately and enjoy!

Note: Feel free to adjust the spice level by adding more or less hot sauce to the slaw. You can also add other toppings such as sliced avocado, chopped tomatoes, or sliced jalapenos to customize your tacos.

Enjoy!
