It's back to school time and what a better way to serve up good grades with a great meal. Follow this easy Alphabet Soup to give you kids some fun in the kitchen while working with letters and grammar!
Ingredients: -
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
4 cups vegetable broth
1 can diced tomatoes
1 cup alphabet pasta
Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and minced garlic to the pot and sauté until they become translucent and fragrant.
3. Add the diced carrots and celery to the pot and cook for an additional 5 minutes, stirring occasionally.
4. Pour in the vegetable broth and canned diced tomatoes, and bring the mixture to a boil.
5. Reduce the heat to low and let the soup simmer for about 15 minutes, or until the vegetables are tender.
6. Add the alphabet pasta to the pot and cook according to the package instructions, usually about 8-10 minutes.
7. Season the soup with salt and pepper to taste.
8. Serve the alphabet soup hot and enjoy!
Note: Feel free to add other vegetables like peas or corn if desired. You can also add cooked chicken or beef for extra protein.
